Fudgy Chocolate Crinkle Cookies

Cookies
- 2 cups flour
- 3/4 tsp salt
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup granulated sugar
- 3/4 cup light brown sugar
- 1/3 cup vegetable oil
- 3 tbsp unsalted butter room temperature
- 4 eggs
- 2 tsp vanilla extract
- 1 cup cocoa powder
Topping

- powdered sugar
In a medium bowl, mix the flour, salt, baking powder, and baking soda together and set aside.
Add the oil, butter, granulated sugar and brown sugar to the bowl of a stand mixer with the paddle attachment. Beat until fully mixed. Beat in the eggs one at a time and the vanilla extract. At low speed, stir in the cocoa powder and then the flour mixture. Scrape the sides of the bowl to make sure everything is fully mixed together. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
Preheat the oven to 350ºF. Line a cookie sheet with parchment paper. Use a tablespoon or scooper to roll out 1 inch balls. Roll each ball in *granulated sugar (optional) then confectioners sugar. Place about 2 inches apart on the cookie sheet. Bake for 9-10 minutes. Let the cookies cool on a baking rack. *The granulated sugar helps create a crunchy crinkle on top, but it does add more sweetness. This step is optional.
