It has been a hectic few weeks. And as much as I had hoped to share more recipes and activities for the holidays, I simply ran out of time. So, if I have to choose just one recipe to share, it has to be these fudgy chocolate crinkle cookies! They are decadent like a brownie, in the shape of a cookie, and covered in snowy powdered sugar. They hit all of the boxes for a festive holiday treat!
The trick to these cookies is chilling the dough before baking. This allows the fat to solidify and keeps the cookies from spreading while baking and also helps give it that fudgy center. And, for a perfect crinkle, lightly roll each dough ball in granulated sugar before the powdered sugar.
Pair the the cookies with some cream puffs for the perfect after dinner dessert duo!
Fudgy Chocolate Crinkle Cookies
Ingredients
Cookies
- 2 cups flour
- 3/4 tsp salt
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup granulated sugar
- 3/4 cup light brown sugar
- 1/3 cup vegetable oil
- 3 tbsp unsalted butter room temperature
- 4 eggs
- 2 tsp vanilla extract
- 1 cup cocoa powder
Topping
- granulated sugar optional
- powdered sugar
Instructions
- In a medium bowl, mix the flour, salt, baking powder, and baking soda together and set aside.
- Add the oil, butter, granulated sugar and brown sugar to the bowl of a stand mixer with the paddle attachment. Beat until fully mixed. Beat in the eggs one at a time and the vanilla extract. At low speed, stir in the cocoa powder and then the flour mixture. Scrape the sides of the bowl to make sure everything is fully mixed together. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Preheat the oven to 350ºF. Line a cookie sheet with parchment paper. Use a tablespoon or scooper to roll out 1 inch balls. Roll each ball in *granulated sugar (optional) then confectioners sugar. Place about 2 inches apart on the cookie sheet. Bake for 9-10 minutes. Let the cookies cool on a baking rack. *The granulated sugar helps create a crunchy crinkle on top, but it does add more sweetness. This step is optional.
