We had so many apples from apple picking, and I knew I had to make something special for Ollie. He loves apples! Almost every night, he shares an apple with Pete. It is really sweet. When trying to figure out something to make with the apples, I decided to pair it with his favorite thing in the universe—cheese. So, I came up with these apple cheddar pupcake bites. I think these are Ollie’s favorite homemade treat yet! He literally licked the pan.

Cheddar Apple Pupcake Bites
Servings: 36 mini pupcakes
Ingredients
- 1 cup whole wheat flour
- 1/4 cup old fashioned rolled oats
- 1 1/2 tsp baking powder
- 2 eggs
- 1/4 cup vegetable oil
- 2 tbsp honey
- 1/2 cup applesauce
- 1 apple peeled and grated
- 1 cup cheddar shredded
Instructions
- Preheat the oven to 350º F and grease the mini muffin pan with vegetable oil.
- In a large bowl, stir together the whole wheat flour, rolled oats and baking powder. In a separate bowl, whisk together the eggs, oil, honey and applesauce. Add the wet ingredients to the bowl of dry ingredients and mix together. Fold in the grated apple and cheddar.
- Spoon out the batter into the mini muffin tin, about a tablespoon each. Cook for about 12-15 minutes until cooked through. Let cool.
