Whether they are for a lazy Sunday breakfast, a quick weeknight dinner, or a late-night snack, pancakes are always a treat.
Making pancakes is also a great way to get the entire family involved in the kitchen, as they are pretty simple to make and not too much of a mess.
This is a base recipe, so feel free to add some chocolate chips, bananas, blueberries or whatever you like. Make them your own!
Simple, Fluffy Pancakes
Easy, buttery pancakes for any time of the day.

Ingredients
- 1 1/2 cups all-purpose flour
- 3 tsp baking powder
- 1 tsp salt
- 2 tsp white sugar
- 1/4 tsp cinnamon optional
- 1 egg
- 3 tbsp unsalted butter melted and cooled
- 1 cup milk
- 1 tsp vanilla extract optional
- butter or neutral oil for cooking
Instructions
- Mix all of the dry ingredients together in a medium bowl. Whisk in the egg, milk, melted butter and vanilla extract until completely blended.
- Heat a skillet or griddle over medium heat. Lightly oil or butter the surface. Ladle the pancake batter onto the skillet or griddle, making the pancakes any shape or size you like. Once the top bubbles, flip the pancake over. Cook until each side is golden brown.
- Top with butter, berries, maple syrup, or whatever you want and enjoy!
- If making in batches, you can heat the oven to 175°F and place the already made pancakes on an oven-safe plate or tray. Keep the pancakes warm in the oven until you are done making the remaining pancakes. Do not leave the pancakes in the oven for longer than 15 minutes or they will start to crisp and dry out.
